Who doesn’t love Italian? Wouldn’t it be nice if you had a quick go-to pasta recipe under your fingertips for when you’re suddenly in the mood for some Italian? But here’s why we all avoid making pasta- the sauces can be a hassle and with all that cheese, it’s not really the most healthy option.
Today I am posting a pasta salad recipe which doesn’t involve any creamy sauce or cheese and is healthy, quick and delicious! I have added a little surprise as well- meatballs- just to brighten up the dish and take it up a notch.
- Penne Pasta 350 gms
- Mushroom 1cup (sliced)
- Capsicum 1 cup (red, yellow, green – sliced)
- Green Shallots 1 cup (cut in 2″ pcs )
- Tomato 1large(seeded and sliced)/Lemon juice 2tbl spn
- Lettuce (2leaves)
- Oregano 1tspn (dried)
- Olive oil 4 tbl spn
- Garlic 4-5 cloves ,crushed (or according to taste)
- Salt (preferably sea salt) (as required)
For Chicken Balls
- Chicken mince 500 gms
- Egg 1
- Bread crumb 1/2 cup
- Garlic 5 cloves
- Coriander leaves 1/4 cup (finely chopped)
- Oil for frying +2 tsp
- Salt (as required)
- Pepper (according to taste)
Bind all ingredients given for meat balls along with 2 tsp oil. Make them into balls and deep fry till golden. Remove on a paper towel and keep aside.
Boil pasta in a deep vessel with sufficient water and salt (add the salt generously). When your pasta is al dente’, drain but do not rinse it. Instead dump it on a large plate, even if the pasta sticks together, so it can cool and dry. The garlic sauce will break them apart later so don’t bother rinsing.
In a wok add all vegetables and stir fry till slightly sautéed and keep aside. If you are counting your calories you may sear the vegetables in a dry wok.
In a heated wok add olive oil and crushed garlic. As your garlic turns slightly pink toss the warm pasta in the garlic sauce so it absorbs more flavor. Now add all sautéed vegetables and meat balls to the pasta. Add dried oregano and check the seasoning.
Your pasta salad is ready.
- If you are adding lemon juice instead of tomato, sprinkle it on top later.
- You may add olives,broccoli or any other vegetable as per your choice.
