Prawn Cocktail

Today I have a dish that is really simple but guaranteed to please everyone. Now I am guessing most of you have cooked/eaten one or the other variation of a shrimp or prawn cocktail. It’s elegant, looks gorgeous and is just yum! For those of you who haven’t ever prepared it yourselves and don’t know where to begin, I think my recipe can help you out a bit. Hope you enjoy.

  • Prawns 500gms
  • Cucumber 1 (seeded and chopped into small dice)
  • Pomegranate arils 1/4 cup
  • Tomato 1 (seeded and chopped into small dice)
  • Capsicum 1/4 cup (,chopped into small dice)
  • Mayonnaise 8-10 tbl spn(preferably fresh,homemade)
  • Worcestershire sauce 2 tsp
  • Tabasco sauce (as per taste)
  • Few lettuce leaves
  • Mango sauce
  • Lemon juice (optional)

Clean peel and de-vein all the prawns (keep few with their shells intact, to garnish your cocktail).

Cook the prawns in a dry pan until pink and keep aside.
In a mixing bowl combine prawns (not the ones we will use for garnishing) mayonnaise, chopped cucumber, tomato, capsicum, Worcestershire sauce, Tabasco sauce and dash of lemon juice.

While you could use store bought mayonnaise for this dish, I would suggest home-made because that’ll give you the required consistency. Store boughts are usually more jelly-like so if you do use store bought mayonnaise then you’ll have to whisk to loosen it a bit.

For home made Mayonnaise

  • Eggs 2
  • Vegetable oil 1cup
  • Kosher salt(sea salt)
  • pepper
  • White Vinegar 4 tsp/lemon juice
  • Dijon mustard 1 tbl spn/ mustard oil 2 tbl spn

Combine the egg and mustard in a bowl with a hand mixer (food processor attached with blade) until evenly combined. With the processor running, slowly add the oil in a thin stream until completely mixed. Add the vinegar, salt and pepper. Store it in your refrigerator.

Now that all your ingredients are prepped, it’s time to assort your cocktail. Arrange the lettuce leaf first and then pour some mango sauce into it (For the of homemade mango sauce/dip, go here). Add the prawn cocktailDSCN2031 mixture and sprinkle with some sweet pomegranate arils on top.

Garnish with shelled prawn and lemon wedge.
Serve  chilled.

It’s important to remember that you can go ahead with any look that pleases you. I also experimented a bit as you can see from the pictures. So try different looks and go with whatever you think is the best!

Hope you liked this simple and delicious starter and can’t wait to try it to dazzle your guests and loved ones. I will be back with more such recipes, till then happy cooking 🙂
