Presented in many shapes and forms, this dish is sure to bring a smile on your face. Today I present my take on it. This is a very simple dish, best suited for brunches. Easy to prepare, filling and let’s be honest, it looks adorable- A parcel of rice! 😀
I’ve even tried it for some of my friends who don’t like eggs. Yes! An omelette without eggs! And it turned out to be absolutely delicious too. So have a look-

In a wok on heat, add butter. Add onion, chilies, peas and mushroom. As the mushrooms are browned add capsicum and carrots. Fry for a minute and add the cooked rice and vinegar. Mix well and add green onion and pomegranate arils to it. Stir fry for 3-4 minutes on medium heat. Your fried rice seems to be ready. Keep it aside.

For  1 wrap (For 1 parcel)

  • Egg 1
  • Milk 1/4 cup
  • Onion 1 tbl spn (chopped)
  • Tomato 1 tbl spn (chopped)
  • Green chili 1 (chopped)-optional
  • Gram flour (besan)1 tbl spn
  • Salt as required
  • Butter 1 tbl spn
  • Cheese slice 1

Put all ingredients apart from the cheese slice (save that for last) in a bowl and mix well so that there are no lumps of flour in your mixture.

Put a pan on heat, add butter and as it is hot pour the mixture.Tilt the pan immediately, so your mixture can spread all over your pan. On low heat cook for 3 minutes.

If you notice that the mixture is starting to dry up, the bottom is set and the edges are crispy, your wrap is done. Now remove it on a plate.

Place two ladle full of rice mixture at the center.

Fold four ways to give a square shape.

Put the cheese slice on top and heat it for 1 minute in an oven. We’re heating so the cheese melts and seals your package. Garnish it with few drops of (Tabasco/tomato) sauce of your choice.
