Mac n Cheese

This dish was first invented in U.K and by the English immigrants it was brought to Canada and U.S.A. Today it’s the most popular dish there..and by some it’s considered as their national dish.
It is also one of the favorites of my daughters..
Traditionally it’s a very simple dish,macaroni,butter/evaporated milk,(preferably cheddar) cheese are layered in a casserole and baked.You can add veggies,meat,as per your choice.
I’ve  tried this in many ways,so first I’m writing the simplest form.

Simple Mac n Cheese 

(serves 3)


  • 250 gms macaroni
  • 4 tbl spn butter
  • 1tbl spn flour
  • 1 egg
  • 500ml milk(preferably milk with heavy cream)
  • 2 finely chopped chili
  • 1/2 tsp mustard powder/oil
  • 1/2 cup cheese shredded

In a large pot of boiling salted water cook and drain macaroni.Cool it,put some butter and oil to avoid sticking.Keep aside.

In a large saucepan, on heat,add flour and stir constantly till pink.In another bowl combine milk,egg,mustard,salt and pepper and whisk together.Add the mixture along with chopped chili and butter to the flour in the saucepan on heat and stir continuously to avoid lumps till slightly thickens. On a low heat,add macaroni,cheese and continue stirring till creamy consistency.

Your macaroni and cheese is ready now. However, if you are looking for a more decorative and slightly elaborate version, you can follow this one instead–

Baked Mac n Cheese

(Serves: 6-8)

  • 100gms butter
  • 2 eggs
  • 750ml milk
  • 1pkt heavy cream
  • 1 cup grated cheese
  • 2tbl spn mustard oil
  • 3-4 cloves crushed garlic
  • 1 onion chopped
  • 250 gms bacon (shredded, cooked crispy)
  • 1 small capsicum chopped
  • 1 small tomato chopped
  • 1 cup chopped mushrooms,cooked browned
  • 3 tbl spn refined flour(maida)
  • 2 green chilies,finely chopped
  • 1/2 cup boiled chicken shredded
  • 250gms shelled prawn, fried
  • 1tsp green onions chopped(to garnish)
  • 1 cayenne pepper chopped (to garnish)
  • salt & pepper to taste
  • 1/2 cup bread crumb

Cook macaroni in salted water and drain.Cool it,put some butter and oil to avoid sticking. Keep it aside.

In a pan heat 1tsp butter and saute’ all veggies and  meat together and keep aside.

In a large saucepan add flour,stir constantly till pink.IMG-20150129-WA0020

In another bowl combine milk,eggs,cream and whisk very well.Combine this mixture to the flour on heat,add 6 tbl spn butter and stir constantly till the sauce slightly thickens.On a low heat,add all fried ingredients,salt and pepper to this sauce.Add mustard oil,garlic,chilli,macaronies,cheese to the sauce.Mix well.Put everything in a buttered casserole and cover with bread crumbs for some extra crunch.Drizzle butter over it.
Preheat the oven in 200 degree and then bake in 180 degree  for 30mins.Garnish with cayenne pepper and green onion and bits of cheese.
